For this recipe I have teamed up with Skittles to give you these amazing ice cream skittle cookie sandwiches which make for a delicious afternoon pick-me-up or post dinner dessert on a warm, sunny day! With the warmer weather coming and summer around the corner it’s definitely time to bring out the ice cream desserts. So sweet and yummy, just make a batch of these cookies and sandwich two between a scoop of your favourite ice cream before eating!
• 100g light brown sugar
• 100g non-dairy spread • 1 tsp vanilla bean extract
• 60 ml oat milk
• 300g plain flour
• 1 tsp baking powder
• 1 tsp bicarbonate of soda
• pinch of salt
• 150g skittles
• dairy-free ice cream
Preheat oven to 175C. In a large bowl mix together the sugar, spread & vanilla extract until combined. Mix in the milk.
Combine the remaining dry ingredients (apart from the skittles) and mix into the wet ingredients to form a stiff, smooth dough.
Fold in the skittles and form 10-12 balls, place on 2 lined baking trays leaving enough room for them to spread slightly whilst cooking.
Bake in the oven for 10 minutes and allow to cool completely before sandwiching the cookies with a scoop of ice cream ready to serve immediately!
