Cookies & Cream Buns (vegan)

Are you a lover of the classic cinnamon bun? I know I am, but sometimes you want to jazz things up a bit and wow your friends with a crazy new filling. What better than the classic oreo? No one I know will pass on the opportunity for a fresh, sweet sticky bun filled with cookies and a delicious buttercream as a weekend treat.

This recipe may take some time for proving the dough, but sit back and relax whilst you prepare and enjoy this baking experience!



Ingredients:

- 3 tbsp (45g) vegan butter block (I use Flora plant based))

- 1 packet (7g) instant yeast

- 1 cup oat milk

- 1 tbsp sugar

- 1/4 tsp salt

- 2 1/2 cups (400g) plain flour

- 1/3 cup crushed Oreo cookies

Filling:

- 4 tbsp melted vegan butter

- 2 tbsp caster sugar

- 1/2 cup crushed Oreo cookies

Frosting:

- 3 tbsp vegan cream cheese (eg. violife)

- 2 tbsp vegan butter, melted

- 1/2 tsp vanilla extract

- 3/4 cup icing sugar

- more Oreos to garnish


Method:

  1. Melt your butter and mix with the oat milk in a small bowl. Once temperature is around 36C sprinkle over the yeast. Let it activate for 10 minutes.

  2. Add the sugar and salt to the yeast mix and stir. Add the flour in increments, stirring to form a dough. Knead in the crushed oreo cookies.

  3. Knead the dough on a lightly floured surface for a minute to form a smooth ball (don't over knead). Lightly grease a mixing bowl and place your dough in. Cover with a damp tea towel and let rise in a warm place for at least an hour (until doubled in size).

  4. For the filling spread the butter over the dough, sprinkle with sugar and add the cookies on top. Gently press them into the dough.

  5. Roll out the dough on a lightly floured surface to form a thin rectangle (about 6mm thick). Brush over the melted butter, sugar and crumbled oreo cookies.

  6. Tightly roll the dough then with a sharp knife, slice into 6-8 large rolls. Place into a lightly greased pan, cover with cling film and sit to rise for a further 30-45 minutes.

  7. Meanwhile, preheat your oven to 170C. Once risen, brush the rolls with butter then transfer to the oven and bake for 25-30 minutes until golden.

  8. Remove from the oven and let cool before adding the frosting. For the frosting mix together the butter & cream cheese until smooth. Mix in the icing sugar to form a sticky, sweet frosting which you can spread over the cooled buns and decorate with extra cookies.
